I had the first portion of a progressive dinner here tonight and this is what we served mmmmmmmmmmmm

Strawberry and Feta Salad

"This unusual combination of strawberries, feta cheese, toasted almonds and romaine lettuce in a sweet and tangy dressing is sure to please your guests. A guaranteed pleaser for any potluck

Prep Time:
15 Min

Ready In:
15 Min

Original Recipe Yield 10 servings

Ingredients

1 cup slivered almonds
2 cloves garlic, minced
1 teaspoon honey
1 teaspoon Dijon mustard
1/4 cup raspberry vinegar
2 tablespoons balsamic vinegar
2 tablespoons brown sugar
1 cup vegetable oil
1 head romaine lettuce, torn
1 pint fresh strawberries, sliced
1 cup crumbled feta cheese

Directions

In a skillet over medium-high heat, cook the almonds, stirring frequently, until lightly toasted. Remove from heat, and set aside.
In a bowl, prepare the dressing by whisking together the garlic, honey, Dijon mustard, raspberry vinegar, balsamic vinegar, brown sugar, and vegetable oil.
In a large bowl, toss together the toasted almonds, romaine lettuce, strawberries, and feta cheese. Cover with the dressing mixture, and toss to serve.

Green Bean Bundles

Ingredients

1 pound fresh green beans
Olive oil
Salt and pepper
Bacon added a small cube of Irish dubliner cheese in the bundle center

Directions

Preheat oven to 350 degrees F.

Blanch green beans for 3 minutes. Toss them in olive oil and salt and pepper. Bundle about 5 green beans and wrap a piece of bacon around the bundle. Place in a roasting pan and roast for 10 to 15 minutes, until bacon is cooked.

Ingredients

1 pound fresh green beans
Olive oil
Salt and pepper
Bacon

Directions

Preheat oven to 350 degrees F.

Mouth-Watering Stuffed Mushrooms

prep Time:
25 Min

Cook Time:
20 Min

Ready In:
45 Min

Original Recipe Yield 12 large mushrooms

Ingredients

12 whole fresh mushrooms
1 tablespoon vegetable oil
1 tablespoon minced garlic
1 (8 ounce) package cream cheese, softened
1/4 cup grated Parmesan cheese
1/4 teaspoon ground black pepper
1/4 teaspoon onion powder
1/4 teaspoon ground cayenne pepper

Directions

Preheat oven to 350 degrees F (175 degrees C). Spray a baking sheet with cooking spray. Clean mushrooms with a damp paper towel. Carefully break off stems. Chop stems extremely fine, discarding tough end of stems.
Heat oil in a large skillet over medium heat. Add garlic and chopped mushroom stems to the skillet. Fry until any moisture has disappeared, taking care not to burn garlic. Set aside to cool.
When garlic and mushroom mixture is no longer hot, stir in cream cheese, Parmesan cheese, black pepper, onion powder and cayenne pepper. Mixture should be very thick. Using a little spoon, fill each mushroom cap with a generous amount of stuffing. Arrange the mushroom caps on prepared cookie sheet.
Bake for 20 minutes in the preheated oven, or until the mushrooms are piping hot and liquid starts to form under caps.

One year ago today my life changed because my Mom passed from pain to heaven I am gratefl she is not in pain == I miss her laugh and caring for her - I miss having a Mom ==This year I have had the sensation of :the buck stops here - like I should know more do more be ///Wise??/ now that I am the eldest female in my own family (I do have lots of older sisters) but I found that sensation an odd part of the grief I have been dealing with this past year == I know the rest of my extended family is also grieving facing their own questions and mortality too... as I add ailments in my own life I wonder about mortality how long I will live? how long healthy? and will I burden my children? and what about Becca? what can I do to become more healthy and to be more prepared - I know it all sounds kinda selfish == and I wonder why grief brings about these thoughts instead of just dwelling on the fun memories but I am coping and just miss my mom at times.......

Its been awhile since I have posted Life is good but I am a different person than I was a year ago in many ways (but that is a story for another day) Today I am posting pictures of taking back our yard! We have had carpenter and acrobat ants munching on our house -so we needed to cut down lots of vines, , bushes and clear the places that they like.

My sister helped us for several hours and as she cut down our huge holly bush she found this --the egg was empty and the caterpillar just fluff but it still looks sweet

my husband has been gardening and this beauty truly caught my eye

it is so shiny and pretty I thought it looked like glass

so I pulled out a glass chili and..


the live one wins don't you agree? Our yard is a work in progress.... the ants have been treated It will be rechecked in a week or two their hiding places are removed ,so....... I hope they don't finish off our house. I keep having dreams like the old cartoons where the termites munch on a house then the walls just fall down and nothing is left...Yikes!!!

Earlier this month I decided I ought to use my $10.00 off stamps at Goodwill,, you accumulate 1 stamp per 10.00 spent and I have been saving mine for awhile. I found this really bright Ralph Lauren yellow jacket like brand new for $5.99 I have always loved RL I think he makes great quality classic clothes that actually fit. But this jacket was SO bright would I actually wear it?

well I paired it w/ this flippy B&W polka dot skirt for 4.99 and borrowed a flower from my daughter and well.....I wore it today! What do you think? I think for 99 cents it was a fun outfit I wonder what else I
could pair it with?

I took this sunset shot while waiting for my flight home from Ohio it was delayed an hour because of the rest of the pictures on this page that I DID NOT take..... I wish I could have seen all the hoopla but I did not know about it till after it was all over...... my question is if the President was home at the white House at 4:35pm why were we delayed till after 7:00pm to take off? Extra-virgin olive oil (EVOO), for drizzling
1 head garlic
1 medium eggplant, ends removed, peeled and cut into small chunks
2 to 3 medium zucchini, ends removed, quartered and into small chunks
2 red bell peppers, cored, seeds removed and cut into small chunks
1 large onion, cut into small chunks
4 sprigs thyme, leaves removed
Salt and freshly ground black pepper
1 pint grape or cherry tomatoes
1 pound whole wheat penne
1/2 cup Italian parsley, chopped

For many years my family and I have collected nativities I am now only collecting from different countries

last year a friend asked me to display them in a community event and I did it again this year

these first four pictures were the majority of what we have received over the years I brought them and a talented lady displayed them for the event

I want to remember the event in pictures because after we closed it down that same day I gifted many of them to loved ones I really would like to reduce my STUFF

I definitely kept the ones from other countries and ones handmade especiallyfor us

My sister ,her Husband and MANY others have been working many weeks on this wonderful activity

She was so kind to invite us to attend and take pictures too-we came in our own costumes

we had to pay taxes

before we could get past this centurion( guard of the city)

so we signed our names

and received a burlap bag of coins to participate

one look back


then the tax collector then let us pass


to play games such as guess the spices like curry, nutmeg, and,cloves by smell,,, I guessed them all

the costumes were great

Yesterday was a terrible, awful, no good, very bad day- I had had a wonderful week visiting w/ my son who just returned home after two years on a mission but --Wednesday afternoon was different
It marked six weeks that my mom had died.-- I was sad---- not because I would have her come back because I wouldn't bring her back to her pain ......I just would like to say a few things to her and have some of the routine ........visiting her back--- to appreciate it--- instead of whine about it --and .............I behaved out of Character for me -- I let three different people know I was upset instead of turning the other cheek -- It is not very satisfying ...... then .........I was tearful and needy - my Husband has been out of town for four days and he is such a great equalizer for me --I forget that when he is not here for me to use as a buffer I need to be ever more vigilant----I AM learning though (if even through trial and error) and need to listen to the little prompts they always help me ...when I listen

came out of the house and was greeted by this lovely sight

I so enjoyed

watching it flit

and fly from bloom to bloom

posing nicely for me I felt light as a butterfly w/ the joy of watching and snapping

chasing it around was a challenge till it stayed

in this one spot so I tried

not knowing what I was seeing

it was moving oddly and I snapped away

I thought what is this!....... oh, they are interacting ---how neat

then I realized the interaction was the ....

I Felt sad and a little sick to my stomach

then it was dead I know its nature-- so I know-- this is what happens

after it was dead i placed it on my Mum

I am doing ok up and down --I know that it is a normal part of grieving to get teary oft times-- like the Potato chip aisle at Walmart - like-when I just hugged my mom's pillow- smelling a faintly familiar scent - I just did not know that that is who I am --I am a strong woman of great faith who loves the Lord and a woman who gets things done - But I could not send some of my Mothers things to my siblings on my own--- I needed someone there w/ me to tape boxes-- to giggle at the odd task I was doing -
I was a bit paralyzed w/ fear (till he landed safely) - when my husband had to disembark 2 fights for the same place in the same day because of mechanical difficulties
-- It was so hard attending another old dear friends funeral this week
and today I only needed a phone call to distract me so that I locked my keys in my car and had to walk 3 miles home after already exercising..but I am finding out who I am-- I am asking for help --and I will be fine I just didn't know.....Thanks to those who are helping and checking on me

It has been a heavy week: sorting cleaning and dealing w/ so many memories

old and new

and all the emotions of all ten of us (the ten children of my Mother).

What a mixed bag because as fun as she was she was always in pain

this July

I think when we die we hope that we will be remembered for our efforts and not so much the other things :)I really hope that for myself and i will try to do that for her


Having spent time w/ my siblings I miss them more now as well.

I wish we had not had to do it so quickly but glad for it to be done so quickly too,
Although i will miss the caring and visiting w/ my Mom
-I would not bring her back to the pain she endured so long

- and I have that peace the gospel brings that she is peaceful now and that we will meet again

some really whacked it and

got one piece

but loosened it up to knock it all out

this one little girl collected almost all of it

and passed it out to all of us-- The whole night was fun -visiting-laughing and eating:)

Back in May my sweet daughter and Hubby got these flowers for me for Mothers Day

they were so pretty and I enjoyed them for a couple of days -but we were headed out of town for my sons graduation

and so when my friend came by I asked if she would like to take them home and enjoy them in my week long absence

she did and this week brought back my vase filled w/kindness

flowers and friends are sweet
