I was asked to do this so here it is.. and I'll do more periodically (I sincerely apologize for those who might think this is a PW copy cat, IT IS -----but I look it as she set a good example, and I was asked to do this, so I did!)
Cashew Chicken Serving Size : 6
1 pound boneless chicken -- cut into 1-inch strips
3/4 cup orange juice
1/3 cup Sue Bee Honey
1/4 cup soy sauce
1 tablespoon cornstarch
1 teaspoon ground ginger
1 teaspoon garlic salt
1/2 teaspoon pepper
2 tablespoons vegetable oil
4 green onions -- cut-up
3 large carrots -- cleaned and sliced
2 celery stalks -- sliced
1 cup cashews
Hot cooked rice
Here are all the ingredients assembled
Start by cutting up veggies Rachel Ray says we should use a chefs knife like this one ...

I subbed baby carrots for lg
Heat 1 tablespoon oil until it begins to smoke. Med - High heat
Slide Veggies into pan, watch for spatters, that oil is hot
Stir-fry vegetables for several minutes until the onions become fragrant.
When done, Remove from skillet, Set aside
While that is cooking I put together the sauce------ Combine juice, soy sauce, honey, cornstarch and seasonings.
I mixed it in our Magic Bullet because it is so handy ( We all Love, love, love it ) but a whisk would have been more fun and just as effective.
Dice meat in smallish bite size pieces --I like to make it small enough that it can fit on fork or chop stick w/ other things for the taste blend.
It actually makes me kinda ..sick... to cut raw meat.... but I just think of other things and get it done quickly.
Heat another tablespoon of oil until smoking and stir-fry chicken strips until browned and tender
Add cooked vegetables, cashews and sauce mix. Continue cooking until sauce bubbles and thickens.
Serve over hot rice. I usually do 1 cup uncooked for 4 people, or more if you like lots of rice
It makes a nice presentation on its own
but the presentation can be prettied up even more if you wish .

What a fun photo cookbook. I wonder if that is the same recipe I use for cashew chicken....I'll have to check when I get home. Miss ya! I feel like I never talk to you anymore...but, in actuality, I don't really talk to anybody! Maybe I'm becoming a recluse :)!
