I had made Mango Carribean Chicken last night w/ enough left over for chicken salad
It was so easy & yummy I thought I would share it- using leftover chicken gives the spice of the original recipe too (this one was Caribbean Jerk Seasoning)

Cranberry Orange Chicken Salad (serves 6)
8 Baked Chicken tenders (shredded)(you know the small kind from costco)
1 small can Mandarin Orange pieces(diced and drained)
1/4 cup dried cranberries (chopped)
3 Tablespoons Mayo
Chop all and mix together
Serve on toasted bread or w/ crackers

This sounds like the perfect recipe for me... I'm really not a great cook and need easy things to make, haha. So, if I was using some chicken other than Costco tenders, about how much would I use? Thanks in advance for answering this question.
